Granting geographical indication protection for Khanh Hoa snail products
Recently, the National Office of Intellectual Property has issued a decision on granting protection to geographical indications for Khanh Hoa snail products. Khanh Hoa Fisheries Association is the organization managing this GI.


Information from the National Office of Intellectual Property said that, on November 9, 2021, the Director of the National Office of Intellectual Property issued Decision No. 5160/QD-SHTT on the grant of a Geographical Indication Registration Certificate No. 00113 for Snail product "Khanh Hoa". Khanh Hoa Fisheries Association is the organization managing this GI.

Khanh Hoa is a coastal province located in the South Central Coast. When it comes to the delicious dishes of the sea in Khanh Hoa, people immediately think of the dishes made from the "De Nhat snail", which is the incense snail.

Khanh Hoa Snail has a snail intestine from 4.8 - 5.5g/snail, large hepatopancreas, hepatopancreas weight from 1.55 - 1.87g/snail, low water content, water content from 66.3 - 67.1%, so when processing, snail meat is less damaged, while eating snail meat has a natural aroma, sweetness, and stronger flavor than snails raised in other provinces.

Khanh Hoa province has a long coastline with a system of bays, islands, peninsulas, estuaries, lagoons, and is less prone to storms. This terrain feature helps to diversify the form of snail farming in Khanh Hoa. In addition to raising snails in cages in the sea, local people also raise snails in ponds and lagoons by bringing in water from the sea.

Compared to other localities, Khanh Hoa province has a stable sea water environment all year round, the average sea temperature ranges from 28.9 to 30oC, the salt concentration is from 32.4 to 33‰, the dissolved oxygen content is from 32.4 to 33oC. High water solubility from 5.0 - 5.3mg/l, NH4 and NO2 content below the allowable threshold. This farming environment is relatively clean, so that the snails rarely get sick, people in Khanh Hoa province can be proactive in the source of seed. The initiative in seed source helps snail farmers in Khanh Hoa province have many opportunities to choose good varieties for raising.

People in Khanh Hoa raise snails 2 crops/year (the main crop is raised from March to April, the secondary season is raised from September to October), while other provinces have to import snails from Khanh Hoa to raise them and can only raise 1 crop/year. In the sub-culture, although this is the rainy season in Khanh Hoa province, due to the characteristics of the snail farming area not near the big river mouth, the salinity and water temperature are still guaranteed for the snail to grow and develop well.

Unlike other localities where they use rudimentary homemade tools to dig and dig up the bottom to raise snails, in Khanh Hoa province, people use shovels to dig the bottom island. The island cultivator will help the bottom of the snail farming to be plowed more evenly, so that the bottom is cleaner and more uniform. On the other hand, the use of an island cultivator will help to distribute the food sources in the farming area evenly, so that in a farming season, most of the Khanh Hoa snails' weight is uniform, and there is little chance of large babies, the ridges on the shell are evenly spaced. In farming areas with dirty bottom, snails are often sick, the veins on the shells are uneven.

The food for snails is mainly wild-caught types in Khanh Hoa waters, which are calculated appropriately by local people to avoid this situation of excess food.
